Why it works: Apple and clove are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,774 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓
Rice and Apple Souffle
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the apples
Peel and core the apples, then place them in a jar with 2 tablespoons of water, moist sugar, butter, lemon rind, clove, and cinnamon.
Set the jar in a saucepan of boiling water and cook until the apples are soft.
Rub the apples through a fine sieve.
Make the rice custard
Mix the ground rice with a little cold milk.
Boil the remaining milk.
Add the blended rice and milk to the boiling milk and simmer gently for 15 minutes.
Stir in the sugar.
Let the mixture cool slightly.
Add the egg yolks one at a time, beating well after each addition.
Gently fold in the stiffly whisked egg whites.
Assemble and bake
In a well-buttered souffle dish, layer the rice and apple puree, forming a pyramid shape with the rice.
Dredge the top with caster sugar.
Bake in a moderate oven at 350°F (175°C) for about 30 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Eggs
- Egg whites whisked and folded in provide the air and lift that make the souffle rise and set.
- Ground rice
- Thickens the milk into a custard that gives the souffle body and a soft, tender structure.
- Sour cooking apples
- Cooked and sieved into a puree, they add moisture, tartness and fruity flavour.
- Milk
- Forms the liquid base of the rice custard, adding moisture and richness.
- Caster sugar
- Sweetens the custard and, dredged on top, helps the surface brown lightly.
- Butter
- Cooked with the apples, it adds richness and fat for a smooth, rounded flavour.
The step that matters
Folding in the egg whites. Stiffly whisked whites hold the air that lifts the souffle. Folding gently keeps that air in; stirring or deflating the mixture makes the souffle rise poorly and turn heavy.
Swap the clove
