What each ingredient does

Apples
Form the pudding's main body and moisture, and supply sweetness and flavour.
Carolina rice
Thickens the pulp and gives the pudding a soft, set structure.
Egg whites
Whisked into foam, they lighten the pudding and help it rise as it steams.
Castor sugar
Adds sweetness and helps balance the tartness of the apples and lemon.
Lemon juice
Adds acidity that brightens the apple flavour.
Lemon rind
Adds fragrant citrus aroma without extra liquid.

The step that matters

Gently fold the egg whites into the mixture. Whisked egg whites trap air that gives the pudding its lightness. Stirring or beating them in vigorously deflates the foam, so the pudding steams up dense instead of light.
