Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix the flour, ground rice, salt, and powdered sugar.

Make the batter

  1. In another bowl, beat the egg yolks and 6 egg whites until fluffy.

  2. Add lemon essence or grated lemon peel to the egg mixture.

  3. Sift the flour mixture into the egg mixture and fold gently.

  4. Pour the batter into a greased tin or paper, leaving room for rising.

Bake

  1. Bake for 40 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake lift and an airy structure as it sets.
All-purpose flour
Provides the main structure that holds the cake together as it bakes.
Ground rice
Adds a fine, tender texture that differs from a flour-only crumb.
Powdered sugar
Adds sweetness and helps give the cake a soft, delicate crumb.

The step that matters

Fold the sifted flour into the egg mixture gently. The batter's rise depends on the air beaten into the eggs. Vigorous stirring deflates that foam and leads to a dense cake, so fold with a light, scooping motion.

Swap the lemon

How well each one fits the dish's main ingredients (flour, rice, sugar, egg):

  1. Raisinfits better
  2. Vanillafits better
  3. Coconutfits about as well
  4. Lemonthe original

Fit is the average pairing score against flour, rice, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
