Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs bind the filling and help it set as it bakes.
Bread crumbs
Absorb liquid and give the pudding body and a soft, tender crumb.
Butter
Adds richness and fat, giving the filling a smooth, tender texture.
Loaf sugar
Sweetens the filling and balances the sharpness of the lemon.

The step that matters

Beat the eggs before adding them. Thoroughly beaten eggs blend evenly into the sugar, crumbs and butter, so the filling sets smoothly rather than in streaks.
