Apple Charlotte

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mold

  1. Preheat the oven to 300°F (150°C).

  2. Rub a deep mold with butter.

  3. Cut thin slices of white bread to cover the bottom and line the sides of the mold.

Layer and bake

  1. Layer thin slices of apples in the dish, sprinkling sugar, bits of butter, grated lemon peel, and lemon juice between layers.

  2. Soak additional thin slices of bread in warm milk to cover the apples.

  3. Place a plate and a weight on top to keep the bread pressed down.

  4. Bake slowly for three hours.

Serve

  1. Turn out of the mold and serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White bread
Forms the structure of the charlotte, lining the mold and holding its shape.
Apples
Provide the main filling, softening as they bake to add moisture and fruit flavor.
Sugar
Adds sweetness and helps the apples caramelize slightly as they bake.
Butter
Adds richness and helps the bread brown and crisp at the edges.
Warm milk
Soaks the bread so it softens and binds to the apples.

The step that matters

Keep the bread pressed down. Weighting the top layer keeps the bread in firm contact with the apples and mold, so the charlotte holds its shape when turned out instead of collapsing or leaving gaps.

Swap the lemon

How well each one fits the dish's main ingredients (bread, apple, sugar, butter, milk):
