What each ingredient does

Green peas
Provide the main body of flavour and a thick, vegetable-based texture.
Lettuces
Add body and a mild, sweet vegetable flavour to the soup.
Cucumbers
Contribute a cool, fresh flavour and soft, moist texture once simmered.
Onion
Adds savoury depth and aroma when stewed slowly in butter.
Butter
Adds fat and richness, and carries the flavour of the stewed onion.

The step that matters

Press the mixture through a fine sieve. Pressing forces the cooked vegetables through the mesh, breaking them down into a smooth purée. Skipping or rushing this leaves the soup grainy and fibrous.

Swap the white pepper
