What each ingredient does

Green peas
Give the soup its body, sweet flavour and bright green colour.
Lettuces
Add soft leafy texture and mild sweetness that thickens the soup as it breaks down.
Cucumbers
Add fresh, mild vegetal flavour and extra moisture to the soup.
Onion
Adds savoury depth and aroma when softened in butter before simmering.
Pea shells
Release flavourful liquid when simmered, forming the base stock for the soup.

The step that matters

Simmer gently for 1 hour. A gentle simmer extracts flavour and softens the vegetables without a hard boil, which can dull the bright green colour and cloud the soup.

Swap the white pepper
