Why it works: Turbot and sauce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 248 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the puff pastry to fit the dish.

  2. Mark the cover about an inch from the edge and decorate it with a knife.

  3. Brush the yolk of egg over the pastry and place it in a preheated oven at 400°F (200°C).

  4. Bake for 20 to 30 minutes until browned and cooked through.

  5. Detach the cover with a knife and scoop out the soft crumb inside.

  6. Drain the pastry on clean paper.

  7. Fill with your choice of fricassee and serve immediately.
