Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Mix the flour and ground rice together in a bowl.

  2. In a saucepan, combine the treacle, butter, and sugar, and heat until melted.

  3. Pour the hot mixture over the flour and rice mixture and stir until combined.

  4. Allow the paste to cool, then add the grated cocoa-nut and mix well.

  5. If desired, fold in the candied orange or lemon rind.

Bake

  1. Transfer the mixture to a greased baking pan and smooth the top.

  2. Bake in a preheated oven at 350°F (175°C) until firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure that holds the dense gingerbread together.
Ground rice
Adds a fine, slightly crumbly texture to the crumb alongside the flour.
Butter
Adds fat for richness and a tender, moist texture.
Treacle
Adds sweetness, moisture and deep color, and helps the cake stay soft.
Grated cocoa-nut
Adds moisture, flavor and chewy texture to the finished bake.

The step that matters

Allow the paste to cool before adding the cocoa-nut. Adding grated coconut to a very hot mixture can soften or lose its texture and flavor, so cooling the paste first keeps the coconut distinct and the batter workable.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (flour, rice, ginger, butter, sugar, cocoa, orange):
