Gooseberry Fool

Ingredients

Directions

Prepare the gooseberry pulp

  1. Combine gooseberries and water in a stewpan.

  2. Cover and cook over medium heat until the fruit is tender.

  3. Rub the cooked gooseberries through a fine sieve and mix in the sifted sugar.

  4. Let the mixture cool.

Make the custard

  1. Heat the cream or milk with cinnamon, lemon peel, sugar, cloves, and coriander seeds in another stewpan for 10 minutes.

  2. Beat the egg yolks with a little flour and water.

  3. Strain the hot milk into the egg mixture, whisking to prevent curdling.

  4. Return the mixture to the heat and stir until it nearly boils.

  5. Remove from heat and place the pan in cold water, stirring for 5 minutes until cool.

Combine and finish

  1. Combine the gooseberry pulp with the cooled cream mixture.

  2. Add grated nutmeg and adjust sweetness to taste.

What each ingredient does

Green gooseberries
Provide the tart fruit base and bulk of the fool once cooked and sieved.
Egg yolks
Thicken the cream mixture into a smooth custard as they set gently with heat.
Cream or new milk
Supplies richness and fat, giving the fool its smooth, creamy texture.
Loaf sugar
Sweetens the fruit and balances the sharpness of the gooseberries.
Flour
Stabilises the egg yolk mixture so it is less likely to curdle or split when heated.

The step that matters

Strain the hot milk into the egg mixture while whisking. Adding hot liquid to egg yolks too quickly, or without constant whisking, scrambles the yolks and curdles the custard. Gradual addition and whisking warm the yolks evenly so they thicken smoothly.

Swap the coriander

How well each one fits the dish's main ingredients (sugar, cream, cinnamon, lemon, clove, egg, flour):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Corianderthe original

Fit is the average pairing score against sugar, cream, cinnamon, lemon, clove, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
