What each ingredient does

Milk
Its proteins form the curd, which gives the filling its body once set.
Butter (in the method)
Adds fat that enriches the curd and keeps the filling tender.
Cream
Adds richness and moisture, softening the filling's texture.
Sugar
Adds sweetness and helps the surface brown lightly in the oven.
Currants
Add pockets of chewy sweetness throughout the filling.

The step that matters

Drain the curd until dry. Excess whey left in the curd makes the filling watery, so it may not set firmly in the pastry.
