Rice Flummery

Ingredients

Directions

Make the flummery

  1. In a pot, combine the new milk, lemon peel, and cinnamon; bring to a boil.

  2. Mix in enough rice flour with a little cold milk to achieve a good consistency.

  3. Sweeten to taste and add the peach water or beaten almond.

  4. Boil while stirring to prevent burning.

  5. Pour into a shape or pint basin, removing the spices.

Set and serve

  1. Once cold, turn the flummery onto a dish and serve with cream, milk, or custard.

What each ingredient does

Rice flour
Thickens the milk into a set, spoonable gel as it cools.
New milk
Forms the base of the flummery and provides richness and body.
Sugar
Sweetens the dish to taste.
Peach water or bitter almond
Adds a distinct almond-like or fruity aroma.

The step that matters

Boil while stirring. Rice flour and milk settle and scorch on the bottom of the pot easily. Constant stirring keeps the starch evenly dispersed and prevents burning, which would give a scorched taste and uneven thickening.
