What each ingredient does

Green peas
Give the soup its body, sweet flavour and bright green colour.
Lettuces
Add soft leafy body and a mild, sweet vegetable flavour to the soup.
Cucumbers
Add fresh, mild flavour and moisture that thins the soup as it cooks.
Pea shells
Release their flavour and natural starch into the cooking liquid, forming the base.
Onion
Adds savoury depth as it softens in butter before going into the soup.

The step that matters

Simmer gently for 1 hour. A gentle simmer keeps the liquid from boiling hard, which would break down the delicate green colour and dull the fresh pea flavour.

Swap the white pepper
