Small Sugar Cakes of Various Kinds

Ingredients

Directions

  1. In a bowl, mix ½ pound of butter with 1 pound of flour until very small.

  2. Blend in ¾ pound of dry sifted sugar and the grated rinds of 2 lemons.

  3. Add a pinch of salt and your choice of flavoring (cinnamon, caraway seeds, or ginger).

  4. Gradually moisten the mixture with 2 to 4 slightly whisked eggs until it forms a firm paste.

  5. Roll out the paste and stamp out shapes with a tin cutter, or drop spoonfuls onto baking sheets.

  6. Space the cakes 2 inches apart on the sheets as they will spread while baking.

  7. For a cheaper version, use 5 ounces of butter, 6 ounces of sugar, 2 large eggs, and a small amount of milk.
