What each ingredient does

Shelled peas
Provide the main body and sweet, tender texture of the dish.
Butter
Adds richness and a glossy coating that carries flavor across the peas.
White sugar
Adds sweetness that balances the savory salt and brings out the peas' flavor.

The step that matters

Boil until almost tender and do not cover the pan. Overcooking turns peas soft and dull in color and flavor. Leaving the lid off lets volatile compounds escape and helps keep the green color bright.

Swap the mint

The recipe marks mint as optional. How well each one fits the dish's main ingredients (peas, butter, sugar):

  1. Cinnamonfits better
  2. Mintthe original
  3. Gingerfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against peas, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
