Brown Betty

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pare, core, and slice the apples.

  2. Butter a pie dish and cover the bottom with a thin layer of bread crumbs.

Layer and bake

  1. Layer the apples on top of the crumbs.

  2. Grate a little lemon rind or add a clove with the fruit, then sprinkle sugar over it.

  3. Add two or three knobs of butter on top.

  4. Continue layering crumbs, apples, sugar, and butter, ending with crumbs on top.

  5. Pour the water over the layers.

  6. Bake slowly at 300°F (150°C) for 1.5 hours or until the apples are soft and the crumbs are brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking apples
Provide the fruit that softens into the body of the dessert.
Bread crumbs
Form the layers that soak up juices and bake to a browned topping.
Butter
Adds richness and helps the crumb topping brown as it bakes.
Sugar
Sweetens the apples and adds to the browning of the layers.

The step that matters

Baking slowly until the apples are soft. Low, slow heat lets the apples cook through and soften before the crumbs over the top darken too much. Pulling the dish too early leaves firm fruit under dry, pale crumbs.

Flavor stand-ins for the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (apple, bread, butter, clove, sugar):

  2. Vanillabetter flavor fit
  3. Pearbetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against apple, bread, butter, clove, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
