  3. Strain the juice and sweeten it to taste.

  4. Add cornflour or ground rice in the same quantity as for a Blancmange.

Set and serve

  1. Pour the mixture into a damp mold and let it cool.

  2. Turn it out onto a glass dish and serve with cream if desired.

Jam version

  1. For jam version, stew raspberry jam with enough water to fill a quart mold, strain, sweeten, add lemon juice and cochineal, then proceed as before.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red currants
Provide the main juice and tart flavour of the jelly.
Raspberries
Add extra fruit flavour and aroma to the juice.
Cornflour or ground rice
Thickens the strained juice so it sets firm when cooled.

The step that matters

Add the cornflour or ground rice. Starch must be fully mixed in and heated so it thickens properly; if it is not, the mixture will stay runny or set grainy and fail to hold its shape when turned out.

Swap the red currant

How well each one fits the dish's main ingredients (rice, sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Red currantthe original
