Why it works: Chervil and lettuce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 396 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Spring Soup

Ingredients

Directions

Cook the vegetables

  1. Combine chervil, lettuce, onions, parsley, butter, and 1 pint of water in a clean stewpan.

  2. Simmer until tender.

  3. Season with salt and pepper.

  4. Strain the vegetables and add two-thirds of the cooking liquid to the stock.

Finish the soup

  1. Beat the egg yolks with the remaining third of the liquid.

  2. Heat gently, then add the strained vegetables to the soup.

  3. For a clear soup, prepare the vegetables as for "Julienne" and do not add the cooking liquid to the stock.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the soup and add richness as they set gently with heat.
Butter
Adds fat and richness, carrying flavour while the vegetables soften.
Green peas
Provide the main body and sweet, fresh flavour of the soup.
Lettuce
Softens during simmering, adding body and a mild, sweet vegetable flavour.

The step that matters

Heat gently after adding the egg yolks. Egg yolks thicken through gentle heat. If the soup boils after the yolks go in, they scramble and the soup turns grainy instead of smooth and silky.

Swap the onion

How well each one fits the dish's main ingredients (peas, chervil, lettuce, parsley, butter, egg, pepper):

Fit is the average pairing score against peas, chervil, lettuce, parsley, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
