Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Combine milk and bitter almonds in a saucepan; let infuse for 2 hours.

  2. Bring the mixture to a boil, then strain it over the breadcrumbs and let cool.

  3. Whisk eggs in a bowl, then add them to the cooled mixture with butter, sugar, and brandy. Mix everything thoroughly until well combined.

Bake

  1. Line the bottom of a pie dish with thinly sliced candied peel, pour in the mixture, and bake at 350°F (175°C) for nearly 30 minutes.

What each ingredient does

Grated bread
Forms the body of the pudding and soaks up the liquid to set into a soft crumb.
Milk
Provides the liquid that softens the breadcrumbs and carries the flavor of the almonds.
Eggs
Bind the mixture and help it set into a custard-like texture as it bakes.
Butter
Adds richness and fat, giving a softer, more tender texture.
Moist sugar
Adds sweetness and moisture, and helps the top brown during baking.

The step that matters

Bring the milk to a boil before straining. Boiling the infused milk extracts its flavor fully and helps it blend evenly into the breadcrumbs. Letting it cool before adding eggs keeps the eggs from scrambling.

Swap the almond
