Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the lemon syrup

  1. Boil the sugar, lemon rind, and juice in ½ pint of water for 15 minutes.

Make the custard

  1. Beat the eggs well and add the sweetened water.

  2. Strain the mixture through a sieve into the serving dish.

  3. Place the dish in a larger dish with boiling water.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) until set.

  2. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Their proteins set as they heat, giving the custard a soft but firm body.
Sugar
Sweetens the custard and balances the sharpness of the lemon.
Lemons
Supply sharp acidity and aromatic oils from the rind for flavour.

The step that matters

Baking until just set. Egg proteins set gently with moderate, indirect heat from the water bath. If the custard gets too hot or bakes too long, the proteins tighten and squeeze out liquid, leaving it grainy or watery. Remove it once it is just set.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
