Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding and absorb the apple pulp and liquids.
Apple pulp
Adds moisture and apple flavor so the pudding stays soft as it steams.
Egg
Binds the mixture so it holds its shape when turned out.
Butter
Adds richness and fat for a tender texture.
Sugar
Adds sweetness and balances the acidity of the lemon and apple.

The step that matters

Steaming for the full time. Steaming gently sets the egg and crumb structure through. Stopping early leaves the centre wet and loose, so check that the pudding is firm before turning it out.
