Lemon Curd Tart

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Soak the biscuit crumbs in milk for 30 minutes.

  2. Cream together icing sugar and coconut butter or olive oil.

  3. Whip in the beaten egg white and the egg yolks.

  4. Add the lemon juice and grated rind, then the soaked biscuit crumbs.

Bake and top

  1. Pour the mixture into a crust-lined dish and bake at 350°F (175°C) until golden brown.

  2. Make a meringue by beating the reserved egg whites with icing sugar.

  3. Spread the meringue over the tart and return to the oven until slightly browned.

  4. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Biscuit crumbs
Soaked in milk, they add body and help bind the filling.
Egg yolks
Thicken and enrich the filling as they set, giving the curd its smooth richness.
Lemon juice
Provides acidity that gives the filling its bright, tart flavour.
Icing sugar
Sweetens the filling and dissolves smoothly into the mixture.
Egg white
Beaten into the meringue topping, where it builds structure and browns in the oven.

The step that matters

Return the meringue to the oven until slightly browned. Meringue can weep or turn tough if overbaked, while underbaking leaves it soft. Watching for a light golden colour keeps the topping stable and tender on the cooled tart.
