Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Preheat the oven to 350°F (175°C).

  2. Place the bread crumbs in a bowl.

  3. Boil the milk and pour it over the bread crumbs.

  4. Add the grated lemon zest, sugar, and butter to the mixture.

  5. Beat the egg yolks and stir them into the mixture.

  6. Line a pie dish with the short pastry and spread the jam over the bottom.

  7. Pour the crumb mixture into the pie dish.

Bake and top with meringue

  1. Bake in the preheated oven until set and browned on top.

  2. Whisk the egg whites until stiff, then gradually stir in 2 oz. of sugar.

  3. Spread the meringue on top of the pudding and return to the oven until set.

What each ingredient does

Bread crumbs
Soak up the hot milk to form the soft body of the custard-like filling.
Eggs
Egg yolks enrich and set the filling, while whipped whites form the meringue topping.
Milk
Provides the liquid that softens the crumbs and gives the filling its moisture.
Butter
Adds fat for richness and a tender texture in the filling.
Jam
Forms a sweet, fruity layer beneath the filling.
Sugar
Sweetens the filling and, in the meringue, helps the whites hold their structure.

The step that matters

Whisking the egg whites until stiff. Under-whipped whites will collapse and weep, while over-whipped whites turn dry and grainy. Stiff, glossy peaks give the meringue its lift and structure when baked.
