Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and help it set firm as it cooks.
Suet
Adds richness and fat that keeps the pudding moist as it cooks.
Flour
Provides structure so the pudding holds its shape after cooking.
Bread crumbs
Absorb liquid and give the pudding a tender, body-filled texture.
Raisins
Add concentrated sweetness and chewy texture throughout the pudding.
Sugar
Adds sweetness and helps the pudding brown slightly as it cooks.

The step that matters

Covering the mold before boiling. The mold must be sealed so steam cooks the pudding evenly and water cannot seep in. A loose cover lets water in and dilutes the batter, while steam trapped inside gently cooks the eggs and starch set.

Swap the currant

How well each one fits the dish's main ingredients (raisin, sugar, bread, flour, egg, milk, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against raisin, sugar, bread, flour, egg, milk, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
