Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Another Way to Stew Duck

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the duck

  1. Preheat oven to 400°F (200°C).

  2. Season the duck with pepper, salt, minced onion, and minced sage.

  3. Half roast the duck.

Make the stew

  1. In a pan, melt the butter and brown it with the flour.

  2. Add enough stock or water to half cover the duck, then season with pepper and salt.

  3. Place the duck in the pan along with the green peas.

  4. Let it stew for 30 minutes, stirring occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main protein and rich fat that flavours the stew as it cooks.
Butter
Carries fat for browning and adds a rich, nutty flavour to the base.
Flour
Browned with the butter to thicken the stock and give the sauce body.
Green peas
Add sweetness and a soft texture as they cook in the stew.
Stock or water
Provides the liquid that gently cooks the duck and forms the sauce.

The step that matters

Half roast the duck. Roasting only partly renders the duck's fat and sets its skin before stewing. Stopping at the right point keeps the meat from drying out during the longer simmer.

Swap the peas

How well each one fits the dish's main ingredients (pepper, onion, sage, butter, flour):

  1. Chestnutfits better
  2. Beansfits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against pepper, onion, sage, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
