Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and help the pudding set into a custard-like texture.
Egg whites
Add structure and lightness, helping the mixture set when baked.
Pounded loaf sugar
Adds sweetness and helps give the pudding a tender, fine-grained texture.
Melted butter
Adds fat for richness and a smoother, moister crumb.
Ground rice
Thickens the mixture and gives it body as it bakes.

The step that matters

Bake until set. Egg proteins coagulate as they heat, turning the liquid mixture firm. Underbaking leaves it runny and hard to turn out, while overbaking can make it dry and grainy.
