Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides the rich base that whisks into a thick, spoonable cream.
Lemons
Supply the juice and rind that give the cream its sharp, fragrant acidity.
Loaf sugar
Sweetens the cream and draws oils from the lemon rind for extra aroma.
Sponge biscuits
Soak up the wine and give the layered dessert a soft, absorbent structure.

The step that matters

Whisking the cream until very thick. Cream must be whisked enough to hold its shape, but stopping at the right point matters because overwhipping cream turns it grainy and can cause it to separate into butter and liquid.
