Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Beat the yolks and whites of the eggs separately until well combined.

  2. In a bowl, mix the sugar, lemon peel, flour, ground rice, sweet and bitter almonds, and orange-flower water gradually.

  3. Combine the beaten eggs with the mixture and beat well.

Bake

  1. Line a pan with parchment paper and pour in the batter.

  2. Bake in a preheated oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air that lifts the cake, while yolks add richness and set the structure.
Sugar
Sweetens the cake and helps give it a tender, fine crumb.
Flour
Provides the main structure that holds the cake together as it bakes.
Ground rice
Adds a fine, tender texture and lightness to the crumb.
Sweet almonds
Add fat and moisture, giving a rich, soft crumb and nutty flavour.

The step that matters

Combining the beaten eggs with the mixture. The whipped whites hold the air that lifts the cake. Beating too hard after combining can deflate that air, leaving a denser cake once baked.

Swap the orange
