Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set with gentle heat, giving it body and richness.
Gelatine
Sets the custard and layers so the pudding holds its shape when turned out.
Ratafia biscuits
Soak up liquid and add structure and almond-like flavour between the custard layers.
Milk
Forms the base of the custard, adding moisture and creaminess.
Castor sugar
Sweetens the custard and balances the tart jelly.

The step that matters

Stir the custard until thickened. Egg yolks thicken as they warm, but if the custard overheats it can curdle and turn grainy. Stirring over gentle heat in a water bath keeps it smooth and evenly set before the gelatine is added.
