  2. Line small patty tins with pastry.

Make the filling

  1. Mix the ground rice with 2 tablespoons of milk.

  2. Boil the remaining milk and add it to the rice mixture, then boil for 4 to 5 minutes.

Bake

  1. Fill each patty case three-quarters full and bake for 10 to 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Forms the thick body of the filling as it absorbs liquid and cooks.
Egg
Binds the filling and helps it set firm when baked.
Milk
Provides moisture and softness, cooking the rice into a creamy base.
Castor sugar
Adds sweetness and helps the filling brown lightly in the oven.

The step that matters

Boil the milk and rice mixture for 4 to 5 minutes. Boiling gelatinises the starch in the ground rice so the mixture thickens. If it is undercooked, the filling stays thin and may not hold its shape when baked in the pastry.

Swap the currant

How well each one fits the dish's main ingredients (rice, raisin, sugar, egg, milk, lemon):
