Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and add structure as they set during steaming.
Beef suet
Adds richness and moisture, helping the pudding stay tender.
Flour
Gives the pudding body and structure once it is cooked.
Bread crumbs
Soak up liquid and lighten the texture of the pudding.
Moist sugar
Adds sweetness and helps keep the pudding moist.

The step that matters

Steam for about five hours. Steaming gently for a long time cooks the eggs and starches evenly and sets the pudding through. Keep the water boiling and topped up so the pudding cooks steadily without going soggy or undercooked.
