What each ingredient does

Rice
Provides a chewy, grainy texture that contrasts with the smooth frozen cream.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer.
Milk
Adds richness and creaminess through its milk fat and solids.
Almond milk
Adds body and a nutty, delicate flavor to the cream base.
Vanilla syrup
Adds sweetness and vanilla aroma, and moistens the rice before freezing.
Orange zest
Adds a bright citrus aroma to the cream.

The step that matters

Adding the drained rice after partial freezing. Freezing the base until thickened and firm first helps keep the rice evenly suspended instead of sinking, and stops it from clumping in a fully liquid mixture.
