Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Christmas Dinners

Ingredients

Directions

  1. Stone the raisins and cut them into two pieces, being careful not to remove the pulp.

  2. Wash and dry the currants a few days in advance, spreading them on coarse paper by the fire and stirring occasionally.

  3. Pick through the currants to remove tiny stalks.

  4. Slice the candied peel into very thin slices.

  5. Make the bread crumbs as fine as possible and chop the suet very finely.

  6. Ensure the beef suet is of good quality to avoid a creamy mass.

  7. In a large bowl, mix the dry ingredients thoroughly, adding the pounded bitter almonds gradually.

  8. Break the eggs one by one into a cup to check for freshness.
