Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. Fry chopped green onions in hot lard until soft.

  2. Add hot water, sugar, raisins, salt, and coriander; stir to combine.

Layer and bake

  1. Wet slices of stale bread in the mixture and layer them in a baking pan.

  2. Pour a little juice over the bread and add pieces of cheese.

  3. Repeat layers until the pan is filled, then pour the remaining mixture over the top.

  4. Bake in a 400°F (200°C) oven until browned.

What each ingredient does

Stale bread
Soaks up the liquid and forms the body of the dish as it bakes.
Cheese
Melts into the bread layers, adding richness and savory flavor.
Lard
Fat that carries the onion flavor and helps the bread brown in the oven.
Raisins
Add sweetness and soft chewiness as they plump in the liquid.

Swap the raisin

How well each one fits the dish's main ingredients (onion, sugar, coriander, bread, cheese):
