Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the yolks of 6 eggs for 15 minutes with 2 cups of powdered sugar.

  2. Add ¾ cup of farina, ¼ cup of bread crumbs and 1 cup of chopped walnuts.

  3. Fold in the stiffly beaten whites of 6 eggs.

Bake and assemble

  1. Bake in two layers for 30 minutes at 350°F (175°C).

  2. Whip 1 pint of sweet cream and sweeten it to taste.

  3. Layer the whipped cream between the layers of pudding.

  4. Spread whipped cream on top of the pudding.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the batter with fat and emulsifying richness, helping it set tender.
Egg whites
Beaten to stiff peaks, they lighten the batter and give it rise and an airy structure.
Farina
Adds starch that thickens the batter and gives the pudding body and structure.
Chopped walnuts
Add fat, crunch and a nutty flavour to the pudding.
Sweet cream
Whipped, it adds moisture and richness and softens the baked layers.

The step that matters

Fold in the stiffly beaten egg whites. Folding gently keeps the air beaten into the whites; stirring vigorously deflates them, so the pudding bakes up flatter and denser.
