Chocolate Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Beat the yolks of the eggs until frothy.

  2. Gradually add the cocoa powder, sugar, ground sweet and bitter almonds, essence of vanilla, and grated bread.

  3. Beat the egg whites until stiff and gently fold them into the mixture.

Bake

  1. Flour a cake tin, pour in the mixture, and bake for about 1½ hours at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the cake lift and an airy, light structure, while yolks add richness.
Grated bread
Adds bulk and soft body to the crumb, helping the batter hold together without much flour.
Ground almonds
Add moisture, fat and a nutty flavour, giving the cake a tender, dense crumb.
Cocoa powder
Provides the chocolate flavour and a deep brown colour to the cake.
White sugar
Sweetens the cake and helps keep the crumb moist and tender.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air that makes the cake rise. Folding gently keeps that air in; vigorous stirring deflates the foam and leaves a dense, flat cake.

Swap the almond

How well each one fits the dish's main ingredients (sugar, cocoa powder, egg, bread, vanilla):

  1. Cocoafits about as well
  2. Hazelnutfits about as well
  3. Almondthe original
  4. Chestnutfits about as well

Fit is the average pairing score against sugar, cocoa powder, egg, bread, vanilla. Candidates are from the same food group and used in at least 100 recipes.
