Rice-pudding, with Apples

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Blanch the rice, then drain and refresh it.

  2. Return the rice to a stewpan and moisten with boiled milk to twice its height.

  3. Bring the liquid to a boil, then reduce to a very mild fire.

  4. Sweeten the mixture when nearly done.

  5. After 15 minutes, remove from heat and add lemon zest, raisins, and eggs one by one, stirring well.

  6. Butter a charlotte mold and coat it with bread crumbs.

  7. Fill the mold with the cooled rice mixture and place it on a baking sheet.

  8. Bake in a moderate oven at 350°F (175°C) for 40 minutes.

  9. Once out of the oven, scoop out a round from the top with a knife.
