Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Pour the boiling milk over the bread crumbs and let it cool.

  2. Mix in the yolks of the eggs, butter, ¼ cup sugar, and the grated rind of the lemon.

  3. Pour the mixture into a pie dish.

  4. Bake lightly at 350°F (175°C).

Add the topping and bake

  1. Whip the egg whites with ⅓ cup sugar.

  2. Gradually add the lemon juice.

  3. Spread a layer of lemon curd over the pudding.

  4. Pour the whipped mixture on top.

  5. Bake lightly.

Serve

  1. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine bread crumbs
Soak up the hot milk and thicken into the custard body.
Eggs
Yolks enrich and set the base; whites whip into the light topping.
Butter
Adds fat for a rich, tender texture.
Castor sugar
Sweetens the base and helps stabilise the whipped egg whites.
Lemon curd
Adds sharp lemon flavour and sweetness beneath the topping.
Milk
Softens the crumbs and adds moisture to the custard.

The step that matters

Bake the topping lightly. Overbaking dries the custard and can toughen or weep the whipped egg white topping. Bake just until the meringue is set and lightly coloured.
