The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks bind the mixture and whipped whites lighten it as the pudding sets.
Bread crumbs
Provide the bulk and body that soak up the butter, sugar and liquid.
Butter
Adds richness and a tender texture to the pudding.
Cocoa
Gives the pudding its chocolate flavor and color.
Milk or cream
Supplies the liquid that moistens the crumbs and cocoa.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives the steamed pudding its lightness. Stirring them in vigorously knocks out the air, so fold gently with a spatula until just combined.

Swap the cocoa

How well each one fits the dish's main ingredients (butter, bread, milk, sugar, egg, vanilla):

  1. Almondfits about as well
  2. Cocoathe original
  3. Pecansfits about as well
  4. Chestnutfits about as well

Fit is the average pairing score against butter, bread, milk, sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
