Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Boil the ground rice as for rice pudding.

  2. Mix the rice with the finely chopped candied peels and the baked apples.

  3. Add sugar and ground cinnamon to taste.

  4. Stir in the egg yolks and then fold in the beaten egg whites.

Bake and serve

  1. Pour the mixture into a mold lined with puff pastry trimmings.

  2. Bake in a moderate oven (350°F / 175°C) for more than half an hour.

  3. Serve with sauce.

What each ingredient does

Egg whites
Whipped to foam, they lighten the pudding and help it rise and set in the oven.
Egg yolks
Enrich the mixture and help it set into a custard-like texture as it bakes.
Ground rice
Forms the body of the pudding, thickening into a soft, tender base.
Baked apples
Add moisture and soft sweetness, giving the pudding its main fruit flavor.

The step that matters

Fold in the beaten egg whites. Egg whites hold air only when beaten to a foam and folded in gently. Stirring them hard knocks out the air, so the pudding bakes denser and rises less.
