Why it works: Capers and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 1,550 recipes mention both. Both carry coumarin, which smells sweet, hay. The science ↓

Oysters a LA Mode

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. In a saucepan, combine the white sauce, capers, oyster liquor, and coarse sea salt. Bring to a boil for a few minutes.

  2. Remove from heat and whisk in the egg yolk.

  3. Add the oysters, prawns, and cooked mushrooms to the sauce.

Bake and serve

  1. Fill the dish with the remaining oysters and sauce.

  2. Sprinkle lobster coral and parsley through a sieve on top.

  3. Heat in the oven at 400°F (200°C) for 10 minutes and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Thickens the sauce and gives it a rich, smooth body when whisked in off the heat.
White sauce
Forms the creamy base that holds the seafood and mushrooms together.
Oysters
Provide the main seafood flavour and tender texture in the finished dish.
Cooked mushrooms
Add earthy flavour and a soft, meaty texture to the sauce.

The step that matters

Whisking in the egg yolk off the heat. Egg yolk thickens through gentle heat. If the sauce is still boiling when it goes in, the yolk can scramble into small lumps, so the sauce must be removed from the heat first.

Flavor stand-ins for the parsley

How well each one fits the dish's main ingredients (sauce, capers, oyster, egg, mushroom, lobster):

  1. Tarragonabout as good a flavor fit
  2. Parsleythe original

Fit is the average pairing score against sauce, capers, oyster, egg, mushroom, lobster. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
