Brown Betty

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Pare, core, and slice the apples.

Layer and bake

  1. Butter a pie dish and cover the bottom with a thin layer of bread crumbs.

  2. Layer the sliced apples on top of the crumbs.

  3. Grate a little lemon rind over the apples or add a clove if preferred.

  4. Sprinkle sugar on the apples and add 2-3 knobs of butter.

  5. Repeat layering with crumbs, apples, sugar, and butter, ending with crumbs on top.

  6. Pour 1 cup of water over the layers.

  7. Bake slowly for 1.5 hours or until the apples are soft and the crumbs are brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking apples
Provide the fruit that softens into the body of the dessert as it bakes.
Bread crumbs
Form layers that soak up juices and brown on top during baking.
Butter
Adds richness and helps the crumb topping brown.
Sugar
Sweetens the apples and helps them caramelise slightly as they bake.

The step that matters

Bake slowly for 1.5 hours. Low, slow heat lets the apples soften fully through before the crumbs over the top dry out and darken. Baking too hot can scorch the crumbs before the fruit is tender.

Flavor stand-ins for the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (apple, bread, butter, sugar):

  2. Pearbetter flavor fit
  3. Vanillabetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against apple, bread, butter, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
