Why it works: Turbot and sauce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 248 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Cut the puff pastry to fit the dish.

  2. Mark the cover about an inch from the edge and ornament it with a knife.

  3. Brush the yolk of egg over the pastry and place it in a preheated oven at 400°F (200°C).

Bake and fill

  1. Bake for 20 to 30 minutes until browned and baked through.

  2. Detach the cover with a knife and scoop out the soft crumb inside.

  3. Drain the butter on clean paper.

  4. Fill with a rich fricassee of lobster, sweetbreads, or other fillings, and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Its layers of butter and dough puff and crisp in the oven to form the hollow case.
Yolk of egg
Brushed on the surface, it promotes browning and a glossy golden finish.
Butter
Melts and steams between the pastry layers, helping them rise and giving richness and flavour.
Fricassee of lobster or sweetbreads
Provides the rich, savoury filling that fills the hollow case.

The step that matters

Baking until fully set and browned. Puff pastry needs a hot oven to create steam that lifts its layers. Underbaked pastry stays soft and collapses or turns gummy, so it should be deep golden and fully cooked through before filling.
