What each ingredient does

Whole rice
Its starch swells and thickens the milk, giving the mixture body and a firm, sliceable texture.
Cold milk
Cooks with the rice to form a creamy, thick base that the rice absorbs as it simmers.
Pounded sugar
Adds sweetness and balances the mild, savoury rice base.
Fresh butter
Adds fat for richness and a smoother, more tender mouthfeel.
Curd cheese
Adds soft moisture and a light tang, making the finished mixture creamier.
Lemon rind
Adds a bright citrus aroma that lifts the rich dairy flavours.

The step that matters

Simmer gently and stir often. Rice and sugar-rich milk settle and scorch on the pan base if left unstirred or heated too hard. Gentle heat and frequent stirring let the starch cook evenly and thicken without sticking or burning.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, sugar, butter, cheese):
