What each ingredient does

Arrowroot
Thickens the milk into a smooth, set custard-like texture as it cooks.
New milk
Forms the body of the dessert and carries its creamy flavour.
Sugar
Sweetens the dessert and balances the mild flavours.

The step that matters

Pouring the boiling milk onto the arrowroot while stirring. Arrowroot must be stirred constantly as hot liquid meets it, otherwise it can clump into lumps instead of thickening evenly into a smooth mixture.
