Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm, wobbly gel as it cools.
New milk
Forms the creamy liquid base that the isinglass sets.
Rich cream
Adds richness and a smooth, velvety mouthfeel to the set dessert.
Loaf sugar
Sweetens the dessert and balances the almond flavour.
Sweet almonds
Contribute nutty flavour and body to the milk mixture.

The step that matters

Simmering the milk with isinglass until it dissolves. Isinglass must fully dissolve in hot liquid to set properly. If it is undissolved or the mixture is not kept hot enough, grains remain and the blancmange will not set evenly.

Swap the mace

How well each one fits the dish's main ingredients (milk, lemon, cinnamon, sugar, almond, cream):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against milk, lemon, cinnamon, sugar, almond, cream. Candidates are from the same food group and used in at least 100 recipes.
