Coffee Cake

Ingredients

Directions

  1. Prepare a sponge as you would for bread or rolls until it is light.

  2. Add ¾ cup sugar, ¾ cup butter, 1 tablespoon salt, and 4 eggs (or 7 yolks) to the sponge and mix well.

  3. Incorporate enough flour to form a soft dough.

  4. When the dough is light, turn it out onto a floured surface and roll it out to ½ inch thick.

  5. Place the rolled dough in a pan and let it rise until light.

  6. Wash the top with milk or cream, sprinkle with sugar, and dust with cinnamon.

  7. If desired, add lemon extract for flavor.

  8. For raisin coffee cake, mix in raisins before rolling out.
