Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and sugar until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. In a separate bowl, combine the buttermilk and baking soda, then add to the butter mixture.

  4. Gradually mix in the flour, followed by the chopped raisins and spices.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
Sugar
Sweetens the cake and helps create a light, fluffy texture when creamed with butter.
Eggs
Add structure and richness, and help bind the batter together.
Flour
Provides the main structure that holds the cake together as it bakes.
Buttermilk
Adds moisture and tang, and reacts with baking soda to help the cake rise.
Baking soda
Reacts with the acidic buttermilk to produce gas that makes the cake rise.

The step that matters

Adding the baking soda to the buttermilk. Baking soda needs an acid, such as buttermilk, to release gas for lift. Combining them before adding to the batter helps the leavening work evenly throughout the cake.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, egg, flour, buttermilk, raisin, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against butter, sugar, egg, flour, buttermilk, raisin, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
