Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Cambridge Gingerbread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Melt the butter in boiling water.

  2. Add molasses and the beaten egg.

  3. Mix and sift the dry ingredients together.

  4. Combine the wet and dry mixtures.

Bake

  1. Pour into buttered small tin pans, filling them two-thirds full.

  2. Bake in a buttered shallow pan at 400°F (200°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds sweetness, dark colour and a rich, moist texture to the gingerbread.
Flour
Provides the structure that holds the gingerbread together as it bakes.
Egg
Binds the batter and helps give the crumb structure as it sets.
Baking soda
Reacts with the molasses's acidity to produce gas, lifting the batter as it bakes.
Butter
Adds fat for tenderness and richness in the crumb.

The step that matters

Fill the pans two-thirds full. Batter leavened with baking soda rises in the oven. Filling the pans only two-thirds full leaves room for that rise, so the batter does not overflow.

Swap the ginger

How well each one fits the dish's main ingredients (butter, molasses, egg, flour, cinnamon, clove):

  1. Nutmegfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Gingerthe original

Fit is the average pairing score against butter, molasses, egg, flour, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
