Tartlets of Almond Paste

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 300°F (150°C).

  2. Butter the smallest-sized patty pans lightly.

  3. Roll out the almond paste as thin as possible and line the pans with it.

  4. Cut the edges with a sharp knife and bake the tartlets slowly until they are crisp but not colored.

  5. Remove them from the pans when two-thirds done and place them upside down on a sheet of paper.

  6. Return them to the oven until fully crisp.

  7. At serving time, fill the tartlets with whipped cream or jam.

  8. If using jam, decorate with a small star cut from the almond paste.
